Profilul mineral al pielițelor de struguri din diferite soiuri

Abstract

Republica Moldova este o țară în care industria vinului ocupă unul dintre locurile principale. Industria de vinificație produce reziduuri solide, cum ar fi tescovina de struguri (60% din totalul subproduselor), care este alcătuită în principal din pieliță de struguri (50%), pulpă, tulpini reziduale (25%) și semințe (25%). Tescovina este cunoscută prin conținut înalt de compuși bioactivi precum și substanțe minerale. Conținutul de substanțe minerale din struguri depinde de soi, de factorii pedoclimatici, de amplasarea podgoriilor, de metodele de agrotehnică. Substanțele minerale sunt localizate în principal în părțile tari ale boabelor - semințe, pieliță, pulpă. În must acestea sunt conținute aproximativ -5 g/dm3, în vin - 1,5-3,0 g/dm3. În studiul de față s-a determinat compoziția minerală în pudra din pielița din soiurile autohtone: Feteasca Neagră și Feteasca Albă. Soiul Feteasca Albă conține: potasiu, g/kg - 34,3, sodiu, mg/kg - 49,8, zinc, mg/kg - 8,35, cupru, mg/kg -25,0, calciu , mg/kg - 1,51, magneziu , mg/kg - 650,0, mangan , mg/kg -9,50, fosfor, g/kg - 3,38, fier, mg/kg -44,5. Pentru soiul Feteasca Neagră au fost înregistrate următoare valori: potasiu, g/kg-68,9, sodiu, mg/kg- 132,0, zinc, mg/kg- 15,8, cupru, mg/kg-62,5, calciu, mg/kg- 3,03, magneziu, mg/kg- 682,5, mangan, mg/kg-9,50, fosfor, g/kg- 5,63, fier, mg/kg-158,8. S-a dovedit că conținutul de minerale din strugurii roșii este de 2 ori mai mare decât cel din strugurii albi.

In the present study, the mineral composition was determined in the powder from the skin of the native varieties: Feteasca Neagră and Feteasca Albă. The Feteasca Albă variety contains: potassium, g/kg - 34.3, sodium, mg/kg - 49.8, zinc, mg/kg - 8.35, copper, mg/kg -25.0, calcium, mg/kg - 1.51, magnesium, mg/kg - 650.0, manganese, mg/kg -9.50, phosphorus, g/kg - 3.38, iron, mg/kg -44.5. The following values were recorded for the Feteasca Neagra variety: potassium, g/kg-68.9, sodium, mg/kg- 132.0, zinc, mg/kg- 15.8, copper, mg/kg-62.5, calcium, mg/kg- 3.03, magnesium, mg/kg- 682.5, manganese, mg/kg-9.50, phosphorus, g/kg- 5.63, iron, mg/kg-158.8. It has been proven that the mineral content of red grapes is 2 times higher than that of white grapes.
