Abstract:
The paper presents the result of the study in the field, which allowed the finding, that several recipes of traditional dishes tend to disappear from the national gastronomic heritage. Among them is the recipe of the dessert "Turte cu mac/Cakes with poppy", specific to the northern area of the Republic of Moldova, Moldova and Transylvania in Romania prepared by Moldovans for hundreds of years, especially on Christmas Eve, but also on other various occasions, as well as the dessert "Plachia" which was prepared in the old days in most villages in the country. Today, they are more and more rarely prepared by Moldovans, being found only in the list of dishes at weddings, celebrating the birth of children or funeral meals. Thus, these culinary pearls of another time need to be rediscovered and recovered. The techniques of preparing these sweets are presented and are highlighted the Turkish influences on the name and technology of obtaining Plachia.
