Securitatea vinului: impactul ionilor metalelor

Abstract

Teza de master dată este elaborată în baza documentelor şi materialelor obținute în baza cercetării bibliogragice şi are drept scop efectuarea analizei ce ține de securitatea vinului, impactul ionilor metalelor, cît și metode de demetalizare a vinului. Structura tezei de master date are următoarea formă: introducere, trei capitole, concluzie şi bibliografie. Această structură permite efectuarea unei cercetari în domeniul temei alese. În introducere a fost argumentată actualitatea temei, au fost stabilite obiectivele tezei în corespundere cu tema tezei de master.

Capitolul 1 include o argumentare a locului de amplasare și construcție a secției de tratare și maturare a vinurilor, urmat de o descriere a operațiilor tehnologice de tratare și maturare a vinurilor albe seci cu o durată a maturarii 1,5 ani.

Capitolul 2 proprietățile vinului, influențate de ionii metalelor, normele admisibile, manifestarea fierului în vin, influența ionilor metalelor asupra stabilității și calității vinului, cauzele apariției fierului în vin.

Capitolul 3 cuprinde practicarea metodelor de stabilizare a vinului, demetalizarea vinului. Concluzia reflectă deducerile generale care se reliefează din teza de master fiind efectuată însumarea rezultatelor de pe urma măsurilor propuse, expusă părerea autorului referitor la studiile efectuate şi rezultatele obţinute.

This master thesis is based on the documents and materials obtained on the basis of bibliographic research and aims to analyze the safety of wine, the impact of metal ions, and demetallization methods for wine. The structure of the master thesis has the following form: introduction, three chapters, conclusion and bibliography. This structure allows for research on the chosen theme. In the introduction, the topicality of the thesis was argued, the objectives of the thesis were established according to the theme of the master thesis.

Chapter 1 includes an argumentation of the location and construction of the wine treatment and maturation section, followed by a description of the technological processes for the treatment and maturation of dry white wines with a maturity of 1.5 years.

Chapter 2 Properties of wines, caused by presence of metal-ions, admissible rules, the manifestation of iron in wine, the influence of metal ions on the stability and quality of wine. Accumulation of iron in wines.

Chapter 3 includes the practice of wine stabilization methods, demetalization of wine. The conclusion reflects the general deductions from the master's thesis, the results of the proposed measures, the author's opinion regarding the studies carried out and the results obtained, were made.
