Calitatea şi siguranţa produselor făinoase cu pulbere din fructe de măceş

Abstract

În lucrarea dată s-au cercetat caracteristicile organoleptice și fizico-chimice a pulberii de măceș. A fost studiată influența adaosului de pulbere de măceș asupra proprietăților fizico-chimice și organoleptice a pastelor. A fost studiată influența pulberii vegetale asupra proprietăților reologice ale aluatului. S-a demonstrat proprietățile măceșului, ca fiind un bun colorant natural, obținând paste cu diferite nuanțe de culoare, în dependență de dozajul utilizat.

In this thesis, were investigated the organoleptic and physicochemical characteristics of the rosehip flour. The influence of the addition of rosehip powder on the physico-chemical and organoleptic properties of pastes was studied. The influence of the vegetable powder on the rheological properties of the dough has been studied. The properties of the rosehip, as a good natural colorant, have been demonstrated in producing pastes with different color shades, depending on the dosage used.
