dc.description.abstract În această lucrare a fost evaluată capacitatea antioxidantă și caracteristicile fizico-chimice a extractelor liposolubile de măceșe. A fost efectuată analiza în timp a impactului compușilor biologic activi asupra caracteristicilor fizico-chimice a extractelor uleioase și cercetarea stabilității oxidative a acestora. Rezultatele obținute au permis argumentarea oportunității de a înlocui compușii antioxidanți sintetici cu cei naturali în procesul de fabricare a produselor alimentare cu conținut lipidic sporit. en_US
dc.description.abstract In this paper, were evaluated the antioxidant capacity and physico-chemical characteristics of lipidsoluble extracts of rose hips. Was performed the analysis of the impact of biologically active compounds on the physicochemical characteristics of oily extracts and the investigation of their oxidative stability. The results obtained by high performance analysis methods have allowed the argumentation of the importance of replacing synthetic antioxidant compounds with natural antioxidants in the process of producing food products with a high content of lipids. en
dc.description.abstract Dans cet article ont été évalués la capacité antioxydant et les caractéristiques physicochimiques des extraits liposolubles de l’églantier. A été évalué l’impact des composés biologiquement actifs sur les caractéristiques physico-chimiques des extraits huileux et leur stabilité oxydative. Les résultats obtenus par des méthodes d'analyse de haute performance ont permis d'argumenter la nécessité de remplacer les antioxydants synthétiques par des antioxydants naturels dans la fabrication de produits alimentaires à forte teneur en lipides. fr
dc.description.abstract В данной работе оценивалась антиоксидантная способность и физико-химические характеристики липидо-растворимых экстрактов шиповника. Был проведен временной анализ воздействия биологически активных соединений на физико-химические характеристики масляных экстрактов и исследование их окислительной стабильности. Результаты, полученные разными методами анализа позволили обосновать важность замены синтетических антиоксидантных соединений природными антиоксидантами в процессе производства пищевых продуктов с высоким содержанием жиров. ru
