Indicii de calitate a ouălor de consum în funcție de alimentația păsărilor

Abstract

Scopul tezei a fost în studierea calităților și proprietăților nutriționale ale ouălor de consum de la găinele ouătoare Hy-Line Brown, în funcție de hrănirea păsărilor. Obiectivele ştiinţifice: analiza compoziției calitative a ouălor în funcție de performanța de creștere a găinilor ouătoare; analiza comparativă a parametrilor morfometrici ai ouălor de găină: rezistența cojii, înălțimea albului, culoarea și calitatea gălbenușului; caracteristicile organoleptice ale ouălor de la găini hibridului Hy-Line Brawn sub influența factorilor de hrănire; productivitatea ouălor de găini ouătoare.

The aim of the thesis was to study the qualities and nutritional properties of table eggs from Hy-Line Brown laying hens, depending on the feeding of the birds. Scientific objectives: analysis of the qualitative composition of the eggs according to the growth performance of the laying hens; comparative analysis of the morphometric parameters of chicken eggs: shell strength, white height, yolk color and quality; organoleptic characteristics of eggs from Hy-Line Brawn hybrid hens under the influence of feeding factors; egg productivity of laying hens.

Целью магистерской работы явилось комплексное изучение качества и пищевые свойства потребительских яиц яичных кур кроссa Hy-Line Brown в зависимости от кормления птицы. Задачами исследований было: анализ качественного состава яиц в зависимости ростовых показателей продуктивности кур-несушек; сравнительный анализ морфометрических показателей яиц кур: прочность скорлупы, высота белка, цвет и качество желтка; органолептические показатели яиц кур кросса Hy-Line под влиянием факторов кормления; яичная продуктивность кур-несушек.
