dc.description.abstract Scopul acestei lucrări este analiza opţiunilor schemei tehnologice de management al calităţii şi siguranţei brânzei Mozzarella bazate pe principiile siguranței alimentelor de origine animală, identificarea factorilor de risc şi evaluarea acestora. Pentru atingerea scopului au fost stabilite următoarele obiective: -documentarea cu privire la noţiunile de bază ale elaborării unei instucțiuni interne de control a calității produsului Mozzarella; - identificarea şi analiza factorilor de risc în fluxul tehnologic de procesare a brânzei Mozzarella; - analiza respectării criteriilor de calitate de către producător; -configurarea și propunerea spre utilizare a instrucțiunii interne a fluxului tehnologic de producere a brânzei Mozzarella. en_US
dc.description.abstract The purpose of this paper is the analysis of the options of the technological scheme for managing the quality and safety of Mozzarella cheese based on the principles of food safety of animal origin, the identification of risk factors and their evaluation. In order to achieve the goal, the following objectives were established: -documentation regarding the basic notions of the development of an internal Mozzarella product quality control instruction; - identification and analysis of risk factors in the technological flow of Mozzarella cheese processing; - analysis of compliance with quality criteria by the manufacturer; - the configuration and proposal for use of the internal instruction of the technological flow of Mozzarella cheese production. en_US
