dc.description.abstract This research aims to explore the aromatic composition of local selection grape varieties. Three wines were submitted to both sensory and gas chromatography – olfactometry analyses. Through descriptive analysis, a set of aroma attributes has been generated. In order to identify these odor active compounds, the wines were evaluated using detection frequency analysis. The panellists generated in total 697 descriptions distributed in 126 odorant areas, but only 565 (81%) were validated as being representative. en_US
dc.description.abstract Lucrarea dată are ca obiectiv explorarea compoziţiei aromatice a soiurilor de struguri de selecţie autohtonă. Trei vinuri au fost supuse analizei senzoriale şi gaz cromatografiei – olfactometriei. Analiza descriptivă a generat un şir de caracteristici aromatice. Pentru identificarea acestor compuşi, vinurile au fost evaluate prin metoda frecvenţelor de detecţie. Evaluatorii au generat în total 697 descriptori distribuiţi în 126 zone odorante, însă numai 565 (81 %) au fost validaţi ca fiind reprezentativi. ro
dc.description.abstract Cet article vise à explorer la composition aromatique des cépages de sélection autochtone. Trois vins ont été soumis à l'analyse sensorielle et a à l'olfactométrie. L'analyse descriptive a généré plusieurs caractéristiques aromatiques. Pour identifier ces composés, les vins ont été évalués par la méthode des fréquences de détection. Les évaluateurs ont généré 697 descripteurs répartis dans 126 zones odorantes, mais seulement 565 (81%) ont été validés en tant que représentatifs. fr
dc.description.abstract Эта статья направлена на изучение ароматического состава сортов винограда местной селекции. Три вина были подвергнуты сенсорному анализу и ольфактометрической газовой хроматографии. Дескриптивный анализ породил ряд ароматических характеристик. Для выявления этих веществ, вина оценивались методом частот сигналов. Эксперты определили в целом 697 дескрипторов распределенных в 126 ароматических областей, но только 565 (81%) были оценены как характерные. ru
