dc.description.abstract În prezenta lucrare, prin analiza fizico-chimică şi senzorială a produselor de tip gem, confitiur, s-a demonstrat corelaţia directă dintre indicii fizico-chimici SU, pH, Ac şi gradul de gust dulce. S-a elaborat o metodă nouă de apreciere a gradului de gust dulce după indicii fizico-chimici a fructelor. en_US
dc.description.abstract In the paper it was demonstrated the direct correlation between the physico-chemical indexes SU, pH, Ac and the sweet taste degree by using the physico-chemical and sensorial analysis of the jam, confiture type products. It was elaborated a new method of appreciating the sweet taste degree in function of physico-chemical indexes of the fruits. en
dc.description.abstract Dans le présent travail, par l’analyse physico-chimique et sensorielle des produits de type marmelade, confiture, on a démontré la corrélation directe entre les indices physico-chimiques SU, pH, Ac et le degré de goût doux. On a élaboré une nouvelle méthode d’appréciation du degré de goût doux en fonction des indices physico-chimique des fruits. fr
dc.description.abstract В настоящей работе, анализом физико-химическим и сензориальным продуктов типа джема, конфитюр, доказано прямая взаимосвязь между физико-химическими показателями и вкусовой степенью сладости.
