dc.description.abstract În acest articol se propune modelarea matematică a produselor în formă de emulsie. Sunt prezentate diverse cazuri de modelări a produselor fabricate după diferite reţete. Se propune ca produsul alimentar supus modelării să fie privit ca un sistem complex. Utilizând modelarea matematică a produselor proiectate putem obţine produse calitative, sigure pentru consum cu proprietăţi fizicochimice şi funcţionale dorite. en_US
dc.description.abstract This article proposes modelling of emulsion products. It is presented several cases of modelling products manufactured by various recipes. It is proposed that food submissive to be regarded as a complex system. Using mathematical modelling of designed products can get quality products, safe for consumption by physicochemical and functional properties desired. en
dc.description.abstract Dans cet article on propose la modélisation de produits en émulsion. Sont présentés différents cas de modélisation des produits fabriqué par différentes recettes. On propose que le produit alimentaire soumis à modélisation soit considéré comme un système complexe. En utilisant la modélisation mathématique des produits conçus nous pouvons obtenir des produits de qualité et sûrs pour la consommation, avec des propriétés physico-chimiques et fonctionnelles souhaitées. fr
dc.description.abstract В этой работе мы предлагаем математическое моделирования продуктов в виде эмульсии. Моделирование выделяет несколько случаев продукции, производимой различными рецептами. Моделирование показывает, что продукты должны рассматриваться как сложные системы. Используя математическое моделирование разработанных продуктов может получить качественную продукцию, безопасную для потребления, с желательными физико- химическими и функциональными свойствами. ru
